House and Home Friday - Biggest Harvest to Date
As of today, I am at 39.03 pounds of produce from my garden since March 3! And this is with not planting my 'greens' in the spring.
So there is 3 pounds of green beans which I will be canning in the next day or two. And freezing some blackberries or maybe making some blackberry syrup. I made some peach nectar with peaches I got at the farm stand and love have a glass of it over ice or mixing a bit with my iced tea.
Cucumbers (which are hidden under the 8-ball zucchini in the picture above) have started coming in. I planted several different varieties of cucumbers, which should be interesting.
The larger tomatoes are starting to come in. Huzzah!
While I will can tomatoes for sauce and base for soups and chili for the winter and make some salsa, I probably will not make any jams or jellies. I have ssssooooo much sitting on my pantry shelves as it is.
Since I am starting on GLP-1 meds in the coming week (I really need to drop 50 pounds), these fresh veggies will come in handy. This is one reason I decided to wait until summer to start, so I could have access to more fresh produce to go with the protein I will need to eat.
So it is off to ready beans for canning, peel peaches for making more nectar and deciding what to do with the remainder of the produce.
