Food and Fiber Friday - Meal Prepping for 3 Households

It seemed like a great idea at the time.

I would get with a BFF and we would make meals to put in the freezer. They would be on the healthier side (maybe), but at least there wouldn't be all the additives you find in pre-made items from the store. 

However, between her schedule and my schedule it wasn't working out to come to one of our kitchens, so I decided to do the cooking and deliver.

There are about 30 meals in the freezer at her house. About the same in mine. And Foxy got a freezer full too. 

At the time I was making the meals, it seemed like a great idea. However, after 2 days of grocery shopping and cooking, then 1 day of driving about 800 miles to deliver the meals, it didn't seem as good an idea as I thought. 

However, has I pulled a meal from the freezer this morning and set it out to thaw during the day to eat this evening, I realized how nice it was. Actually, since the meal is stuffed shells, I will get 2 meals out of the container since I will pair it with a salad and some garlic bread. 

And...

I am thinking about what I want to make for October!

I am leaning toward soups and stews. 

But for now, it's time to turn tomato juice into Bloody Mary Mix and to juice 2 baskets of peaches.
